Good day loves! Don’t freak out when you read the “raw zucchini” in the title. As a pinterest addict, I have been seeing a ton of zoodle (zucchini that has been spiralized into noodle-like strings.) recipes. I figured that I would just try them as a base for a regular salad. I normally use some type of green leaves but that could get boring. Not only was the zucchini a nice spin to my salad, but it tasted amazing!! Sometimes I have to force myself to like some healthy foods but I didn’t have to with the zoodles. Of course, zucchini is healthy for you so this dish is a win-win.
I purchased my spiralizer from amazon. You can use quite a few different tools and get the same finished result. I would say the only downfall to spiralizing the zucchini is that it’s a little time-consuming to actually spiralize the zucchini (only a couple of minutes) oppose to grabbing some lettuce or spinach out of the fridge. You would also have one more dish to wash but I feel like it’s totally worth it.
For toppings I used:
- cherry tomatoes
- fat-free cheese (I normally use feta but was out)
- a half of avocado
- yellow peppers
- unsalted sunflower seeds
- a boiled egg
- dressed with fat-free balsamic dressing
