Today’s lunch is a meatless quinoa bowl that consist of leftovers from dinner last night. Most of you are aware that I’ve stop eating meat for the most part. FYI, seafood is still a part of my life! Anyway, I threw together a few things that I already had in my kitchen:
- roasted vegetables (zucchini, squash, broccoli, mushrooms, red and yellow bell peppers)
- black beans cooked with garlic
- sweet potatoes
I never measure my seasonings and basically grabbed what I saw in my pantry. I found that when I reheated the leftovers, the food was a little dry. For a simple fix, I added some low sodium soy sauce and some sriracha sauce. When I first started eating meatless meals, I found myself getting hungry soon after. Adding the sweet potato keeps me full longer.
