Do you have that go-to meal when you are pressed for time and energy? Today I have a quick recipe that I thought would come in handy for my busy bees. This is super quick and you only need 4 ingredients. I love to make a lot of these to freeze some of them for later. You can also change the ingredients as you like. Feel free to add or take away. It’s totally up to you. One last thing that I would like to point out is that this meal is budget friendly. If you are watching your coins, pin this recipe! ……hint, hint to the college kiddos.
- ground meat (I prefer turkey)
- tortillas (I prefer whole wheat)
- refried beans (I prefer low-fat or low sodium)
- Shredded cheese (I prefer fat-free)
Cook your ground meat. I do add seasoning. You could add onions and bell peppers if you like. Drain out the grease of your meat. Stir in refried beans. Add a little water to break it up, if need be. I normally don’t. Add your shredded cheese to the mixture and stir. Roll your tortillas with your mixture and set them in an oiled or nonstick baking pan. Use toothpicks for help on keeping them rolled in the pan as you are adding more. Fill your pan and bake for about 10-15 minutes. I love to dip my wraps in pecante sauce when eating.
That is basically it. Like I previously stated, you can add or take away as you like but this is the main thing I do when I am in a rush and just want something quick. Whenever I don’t have anything prepared for my lunch the next day, I simply grab a few of these wraps out of the freezer. A few sides that I may add would be corn on the cob and a salad. Jellybean even loves these wraps and has approved them for being kid friendly.
