Hey beauties! Today I have another easy recipe for you. I have heard people talk abut eggplant a lot recently so I figured I would try it out! This eggplant dressing taste somewhat like rice dressing or “dirty rice” as us southerners call it.
For the eggplant dressing, all you will need:
2-3 large eggplants (They cook down a lot! Next time I will use 3)
1 1/2 pound of ground meat
1 can of diced tomatoes
2-3 cups of rice (Here I made 3 cups)
Peel your eggplant and cut in cubes.
*The peeling technique I use is holding the eggplant at the top by the stem and peeling with a knife using a downward motion. Use on a cutting board, of course.
After cooking your ground meat and draining the grease, add in your cut up eggplant.
Add seasoning, onions, and watch it cook down! It doesn’t take long!
Add in your cooked rice!
…..and your diced tomatoes
There you go!!!
It is really easy to drown out the eggplant so next time I will use more eggplant and less rice. I will use 3 eggplants and 2 cups of rice. I hope you enjoy!
*jalapeno peppers would also be a great addition
*taste great on crackers
*can be used as a stuffing inside of bellpeppers with shredded cheese on top
