Most of us want a quick meal after workouts. We are often too tired to be throwing down in the kitchen at that time. Sometimes, I overthink my meals. I totally forget about the easy, fast meals. You know when we get hungry, we’re ready to eat asap! That’s how the fast food restaurants get us every time. It literally takes about 5 minutes to throw this meal together. I normally fix this after a workout, but you can eat it anytime. The will only need three main ingredients: chicken, eggs, and saracha (or ketchup, or salsa).
- Make sure your chicken is cooked. I used the Tyson grilled chicken that you can find in the frozen section of most grocery stores. After defrosting my frozen chicken, I throw it in a heated skillet to warm. (I use coconut oil or extra virgin olive oil to cook with.) Note: You can also use a rotisserie chicken that’s already cooked that most grocery stores sell in their deli department.
- Next, I throw in two or three eggs to scramble in with the chicken. Season as you like. I only use a little salt-free seasoning.
- Once your eggs are cooked on the chicken in the skillet, you’re done! Add your salsa, ketchup or saracha on top. I love saracha or salsa. The ketchup that I have has too much sugar in it.
Wasn’t this easy? I swear this meal reminds me of chicken nuggets! You can add more to this meal if you are really hungry. Some things I would add would be raw spinach, quinoa, or roasted veggies.
